We are here to help you make something delicious with the meat from this season's harvest. Separate grinds have separate minimums. Prices listed per pound unless specified otherwise.

Peppersticks

This item is billed on the green weight (prior to smoking) and loses approximately 25%. 10# in = 7.5# out

*Please note: We only accept trim for this item in our slow periods (generally February-April). Expected wait time is 10-16 weeks.

Summer Sausage

This item is billed by pound on the finished weight of the product and gains approximately 25%. 10# in = 12.5# out
