Mohawk Valley Meats is the processing division for Bright Oaks. We harvest the animals, break the carcasses into primals and deliver the meat to Bright Oaks for further processing. Along with servicing Bright Oaks, Mohawk also offers our valuable butcher service to farmers from Washington, Oregon, California, and Nevada. We service small farmers who sell quarters of beef to individuals, and also process hundreds of head of lamb for a large chain of grocery stores in Portland and Seattle. You can find products processed by Mohawk in farmers markets, local stores, and personal freezers across the Northwest!

Dave and Darla Harris, owners of Bright Oaks since 1978, purchased Mohawk after a change in the industry in 1995. Until then, it was standard to use full 1/4 and 1/2 carcasses. Trucking became harder to organize for these large pieces and markets began to switch to the more efficient boxed meats. Bright Oaks wanted to stick to their roots of dry-aged carcasses, and so Mohawk joined the family.
We undergo extra auditing and follow additional regulations to ensure that we provide the best care of the animals at our facility.
We are an official establishment, and are qualified to process products for re-sale at Farmer's Markets, Grocery stores, and other retail venues.
We process all product with the same organic practices used on certified product.
