Mohawk Valley Meats is the processing division for Bright Oaks. We harvest the animals, break the carcasses into primals and deliver the meat to Bright Oaks for further processing. Along with servicing Bright Oaks, Mohawk also offers our valuable butcher service to farmers from Washington, Oregon, California, and Nevada. We service small farmers who sell halves of beef to individuals, and also process hundreds of head of lamb for a large chain of grocery stores in Portland and Seattle. You can find products processed by Mohawk in farmers markets, local stores, and personal freezers across the Northwest!


We process a variety of species- beef, pork, lamb, buffalo, emu, and elk.

Beef

Slaughter for Beef up to 600# HCW- $100 (per head)

Slaughter for Oversize Beef anything Over 600# HCW - $0.12/# over

Process & Paper Wrap- $0.80/# (on the hanging weight of the entire carcass)

Paper Wrap Offal- $0.80/#

Process & Vacuum Seal- $1.00/# (on the hanging weight of the entire carcass)

Vacuum Seal Offal- $1.00/#

Beef Bulk Sausage-$0.40/#


Pork

Slaughter up to 250# HCW- $80 (per head)

Slaughter for Oversized Pigs anything Over 250# - $0.12/# over

Process & Paper Wrap- $0.80/# (on the hanging weight of the entire carcass)

Process & Vacuum Seal- $1.00/# (on the hanging weight of the entire carcass)

Curing and Smoking Bacon/Ham- $1.50/# (on the weight of the product being smoked)


Lamb/Goat

Slaughter Fee - $30 (per head)

Disposal Fee - $3 (per head)

Paper Wrap Carcass - $0.90/# with a $55 minimum

Vacuum Seal Carcass - $1.00/# with a $65 minimum

Lamb/Goat Bulk Sausage-$0.40


New Beginnings

Dave and Darla Harris, owners of Bright Oaks since 1978, purchased Mohawk after a change in the industry in 1995. Until then, it was standard to use full 1/4 and 1/2 carcasses. Trucking became harder to organize for these large pieces and markets began to switch to the more efficient boxed meats. Bright Oaks wanted to stick to their roots of dry-aged carcasses, and so Mohawk joined the family.
